Ingredients
for Bhaji:
- 3 medium potatoes, boiled and mashed
- 1 cup cauliflower, finely chopped
- 1 cup green peas
- 1 cup carrots, finely chopped
- 1 cup bell pepper, finely chopped
- 2 medium onions, finely chopped
- 2 medium tomatoes, finely chopped
- 2-3 green chilies, finely chopped
- 1 tablespoon ginger-garlic paste
- 2 tablespoons butter
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 2 tablespoons Pav Bhaji masala
- 1 teaspoon red chili powder
- Salt to taste
- Fresh coriander leaves, finely chopped
for pav:
- 8 pav buns
- 2 tablespoons butter
- 1 teaspoon Pav Bhaji masala
For Garnish:
- 1 lemon, cut into wedges
- Finely chopped onions
- Fresh coriander leaves
- Butter
Instructions
Prepare the Vegetables:
- Boil the potatoes, cauliflower, green peas, and carrots until tender. Drain and set aside.
- Mash the boiled potatoes and roughly mash the other vegetables.
Make the Bhaji:
- Heat 2 tablespoons of oil and 2 tablespoons of butter in a large pan over medium heat.
- Add cumin seeds and let them splutter.
- Add finely chopped onions and sauté until they turn golden brown.
- Add ginger-garlic paste and sauté for a couple of minutes until the raw smell disappears.
- Add green chilies and finely chopped bell peppers. Cook for a few minutes until the bell peppers soften.
- Add finely chopped tomatoes and cook until they become soft and mushy.
- Add turmeric powder, red chili powder, and Pav Bhaji masala. Mix well.
- Add the mashed vegetables to the pan and mix thoroughly.
- Add water as needed to achieve a thick, slightly runny consistency. Let it simmer for about 10-15 minutes.
- Add salt to taste and adjust the spices as needed.
- Finally, add a dollop of butter and garnish with fresh coriander leaves.
Prepare the Pav:
- Slice the pav buns horizontally.
- Heat a tawa or griddle and add a bit of butter.
- Sprinkle some Pav Bhaji masala on the butter and toast the buns until they are golden brown and crisp.
Serve the hot bhaji with buttered pav buns. Garnish with chopped onions, fresh coriander leaves, and a wedge of lemon. You can add an extra dollop of butter on top of the bhaji if desired. Enjoy your homemade Pav Bhaji!
